First, dissolve sugar in champagne, add water, and let cool. Then, toss diced strawberries in sugar to coat.
Combine egg yolks and sugar in a double boiler or metal mixer bowl over simmering water, whisking until well combined.
Cook and whisk vigorously for approximately 5 minutes until the mixture grows in volume, thickens, and turns pale yellow.
Set the egg mixture aside to cool to a little warmer than room temperature.
When the egg mixture has cooled, add the mascarpone cheese and gently fold together until combined.
Whip heavy whipping cream on high speed until stiff peaks form while the egg mixture cools.
Gently fold the whipped cream into the mascarpone/egg mixture in two parts.
Dip ladyfingers into champagne mixture for 3-5 seconds, then place them in a 9x13 pan to create the first layer.
