Can you believe we are already half way through July? Where has the summer gone? It just flies by when you’re having fun and keeping busy. And there are so many things to love about summer. The hot sun on your skin, the daylight that lasts until late at night and then of course the ice cream! There’s no better time of year to enjoy a tasty cold treat than in the summer.
This ice cream pie is the perfect way to enjoy the hot days of summer. It not only celebrates a love of ice cream, but also our love of all the fresh fruit you get in the summer.
Ever since I was a kid, I’ve been a big strawberry fan and the strawberries (and all fresh produce!) at ALDI right now are fresh and delicious – and not to mention a great price! Shopping at ALDI is such a breeze and I always love looking through what they have in the ALDI Finds section. I made sure to stock up on several cartons of berries (and a several other things) while I was there. We not only enjoyed them in this pie – the hubs takes them to work every day too. We are strawberry addicts!
So of course this ice cream pie is the perfect flavor for us. The hubs could hardly wait for me to finish taking pictures before he feasted on it. We took what was left to a friend’s house later that night and it was a big hit!
How to Make a Strawberry Dulce de Leche Ice Cream Pie
To start there’s the crust. You guys, this crust is the jam. You might be wondering what could make a crust so special – especially a graham cracker crust – so let me share my little secret with you.
A little bit of cinnamon.
Crazy, right? It won’t necessarily be the perfect addition to every pie, but I happen to love just a touch of cinnamon with berry desserts and with anything dulce de leche. You almost don’t even know it’s there, but everyone who tried it fell in love with the crust.
The first layer of the pie filling is a dulce de leche layer with a little bit of whipped cream mixed into it. It lightens up the dulce de leche a bit, which is great with the ice cream and helps it not overpower the strawberry flavor.
In the middle is a layer of freshly sliced strawberries, and then on top is a no-churn strawberry ice cream. To make the ice cream, you’ll actually start by making what you basically think of as a strawberry pie filling. Some strawberry puree is cooked with a little sugar and water and thickened with some cornstarch. Cooking down the mixture removes moisture from the pureed strawberries that would normally make kind of an icy ice cream, making it nice and creamy! It also intensifies the strawberry flavor so you don’t need as much of it to get a lovely flavor.
Once the pie is frozen, you can top it off with a drizzle of dulce de leche, some whipped cream and strawberries. This pie was a huge hit and it’s such a great ice cream pie for summer! Time to get on it before summer slips away!

This Strawberry Dulce De Leche Ice Cream Pie is made with a delicious layer of whipped dulce de leche filling, sliced strawberries and no-churn strawberry ice cream! With a hint of cinnamon, the crust recipe will become your new favorite!
Ingredients
Crust
- 1 1/4 cups (168g) graham cracker crumbs
- 2 tbsp (26g) granulated sugar
- 1 tsp ground cinnamon
- 6 tbsp (84g) salted butter, melted
Dulce de Leche Layer
- 1/2 cup (120ml) heavy whipping cream, cold
- 1/4 cup (29g) powdered sugar
- 1/3 cup (94g) dulce de leche
Strawberry Ice Cream Layer
- 1 lb strawberries, washed with stems removed
- 2 tbsp (30ml) water
- 1/4 cup (29g) powdered sugar
- 1 1/2 tbsp cornstarch
- 3/4 cup (180ml) heavy whipping cream, cold
- 6 tbsp (44g) powdered sugar
- 3/4 cup (180ml) sweetened condensed milk
- 2–4 drops red food color, optional
Whipped Cream and Toppings
- 3/4 cup (180ml) heavy whipping cream, cold
- 6 tbsp (43g) powdered sugar
- 1/2 tsp vanilla extract
- Dulce de leche, to drizzle
- Strawberries, cut in half
Instructions
To Make the Crust
- Grease a 9-inch pie pan and preheat oven to 325°F (163°C).
- Combine graham cracker crumbs, sugar, cinnamon and melted butter in a medium bowl and mix until combined.
- Press the crumb mixture evenly into the bottom and up the sides of the pie pan, then bake for 8-10 minutes. Set aside to cool.
To Make the Dulce de Leche Layer
- Add the heavy whipping cream and powdered sugar to a large mixer bowl fitted with the whisk attachment and whip until stiff peaks form.
- Add about half of the whipped cream to the dulce de leche and carefully fold together until combined.
- Add the remaining whipped cream and carefully fold together until well combined.
- Pour the dulce de leche filling into the pie crust and spread into an even layer.
- Thinly slice a few strawberries and add a single layer of sliced strawberries on top of the dulce de leche layer. Then place in the freezer.
To Make the Strawberry Ice Cream Layer
- Cut strawberries in half until you have about 1 1/2 cups of halved strawberries. Add them to a food processor and puree until smooth. You should end up with about 3/4 cup of strawberry puree. Add the water to strawberry puree.
- Combine the sugar and cornstarch in a saucepan, then stir in the strawberry puree.
- Stir in the strawberry puree and cook over medium heat, stirring constantly for about 10 minutes, until mixture thickens and comes to a boil.
- Allow to boil for 1 minute, then remove from heat and set aside to cool.
- Add the heavy whipping cream and powdered sugar for the strawberry ice cream to a large mixer bowl fitted with the whisk attachment and whip until stiff peaks form.
- Add about half of the whipped cream to the sweetened condensed milk and carefully fold together until combined. Avoid overmixing.
- Add the remaining whipped cream and carefully fold together until well combined.
- Fold the cooled strawberry mixture into the whipped mixture to finish the strawberry ice cream filling.
- Spread the creamy strawberry ice cream filling evenly over the layer of strawberry slices in the pie.
- Freeze the pie until firm, 4-5 hours or overnight.
To Finish the Pie
- Finish off the pie just before serving. Add the heavy whipping cream and powdered sugar for the whipped cream to a large mixer bowl fitted with the whisk attachment and whip until stiff peaks form.
- Drizzle some dulce de leche over the pie, then pipe swirls of whipped cream around the edge. Top with some halved strawberries, if desired.
- Freeze until ready to serve and enjoy within 1 week.

Lindsey, what is dulce de leche? I’ve never seen it anywhere.
It’s similar to caramel. You can usually find it in the grocery store near the evaporated and sweetened condensed milk, but it’s also available on Amazon.
I love all your recipes! Im from Argentina, we love dulce de leche down there and we have a classic cake very easy to make, its a mix of creamcheese (a very soft one) and dulce de leche and layered with chocolate cookies soaked in coffe, the cookies are the Chocolinas and the cake os named Chocotorta, love it!
