Strawberry Chocolate Cookie Sandwiches

So for probably six months or so, the hubs and I have been considering moving. Not far, just locally, but we’ve been looking around for a home that would basically give me more office space. I’m kind of taking over the better half of the downstairs and we’d love to find somewhere with a basement to put me and all of my stuff. Not only would I stop taking over the rest of the house, but when I’m done working at the end of the day, I could close a door or leave it or whatever and just be done. Right now my office is right at the front of the house and it’s never that beautiful to look at. Lighting equipment, tripods, etc usually aren’t.

But lately something we’ve noticed when looking at new neighborhoods is that so many of them don’t have mailboxes at each home. It’s like they all have these little post office boxes in one little spot, kind of like at apartments. We couldn’t figure it out and it drove us a little nutty. We actually left a couple neighborhoods when we saw it because we found it so strange.

So finally I just asked someone when they were showing us a house the other day why it was such a new trend. to my surprise she said it was a change mandated by the post office for new neighborhoods since there’s so little mail anymore. Crazy!

While I totally believe it (hello, email and internet), I’m also sad. Amazon is totally my BFF and I love when I get the packages delivered. I would be totally un-spoiled having to go to a little mailbox in a central location everyday.

Yes, I know. #firstworldproblems. But still!! 🙂 What ever will I do when I’m waiting for my packages to arrive?!

I supposed my desserts will have to console me and keep me company. 😉 These cookies would make the perfect snacking item for those times. Not only are they delicious, they are easy to make.

How to Make Chocolate Strawberry Cookie Sandwiches

The cookie dough is super easy to put together. A little mixing is really all it takes. It’s a relatively thin batter and creates a more cake-like cookie. They are super soft and delicious and almost remind me of the cookie of a whoopee pie.

To scoop the dough into balls on the cookie sheet, you could simply use a tablespoon, or you could pipe it. Because it’s fairly soft and sticky, you won’t want to use your hands and it’s a great consistency for piping. I use my Ateco 808 tip, measure out the first ball with a tablespoon so I know the right size, and then pipe the rest. It goes SO FAST! And they are basically perfect circles, which makes my little perfectionist heart happy.

The strawberry frosting is flavored with a strawberry jam, which is pretty painless too. I added about 5 tablespoons of jam to my frosting to give it a nice strawberry flavor, then colored it with a bit of pink gel icing color.

The final cookies are perfectly soft and have such great strawberry and chocolate flavor. Because the cookies are softer, the frosting doesn’t totally squish out of the sides when you bit into the sandwich, which I’m a fan of. These cookies were a big hit with the hubs’ co-workers – I hope you love them too!

Strawberry Chocolate Cookie Sandwiches

These Strawberry Chocolate Cookie Sandwiches are made with soft chocolate cookies, strawberry frosting and cute sprinkles for decoration! They make such a great, easy little treat!


Ingredients

CHOCOLATE COOKIES

  • 1 1/2 cups (195g) all purpose flour
  • 1/4 cup (29g) natural unsweetened cocoa powder
  • 1 1/4 tsp baking powder
  • 1/2 cup (112g) salted butter, room temperature
  • 1 cup (207g) sugar
  • 1 egg, room temperature
  • 1/2 cup (120ml) milk, room temperature

STRAWBERRY FROSTING

  • 1/2 cup (112g) salted butter
  • 1/2 cup (95g) shortening
  • 4 (460g) cups powdered sugar
  • 45 tbsp strawberry jam/preserves*
  • Pink gel icing color
  • Sprinkles

Instructions

1. Preheat the oven to 350°F (190°C). Prepare a cookie sheet with parchment paper or a silicone baking mat.
2. In a medium sized bowl, combine the flour, cocoa and baking powder. Set aside.
3. Cream the sugar and butter until light and fluffy, 3-4 minutes.
4. Add the egg and milk and mix until combined.
5. Add the flour mixture and mix until well combined.
6. Drop level tablespoons of cookie dough onto a lined cookie sheet. You could also use a piping bag and round tip to pipe the dough.
7. Bake for 6-8 minutes. Allow the cookies to cool on the cookie sheet for 2-3 minutes, then remove to a cooling rack.
8. To make the frosting, beat the butter and shortening until smooth.
9. Add about half of the powdered sugar and mix until well combined.
10. Add 2 tablespoons of strawberry jam and mix until smooth.
11. Add the remaining powdered sugar and mix until smooth.
12. Add an additional 2-3 tablespoons of strawberry jam, then mix until smooth. Add some pink coloring to the frosting, if desired.
13. Create cookie sandwiches with two cookies at a time. Pipe frosting onto one cookie, then add the second. Add sprinkles around the sides of the cookie so that they stick to the frosting.
14. Store cookies in an air tight container. Best for 2-3 days.

*I’d suggest using a jam or preserves without too many large strawberry chunks. They could make it hard to pipe the frosting.

    These look delicious! I would like to bake them for a luncheon we’re having at work. Do you know if it would be okay to make the cookies the day before I frost them and then keep them at room temp until the following day? Also, do you think the frosting would work using all butter…or half butter and half cream cheese instead of shortening? Thanks so much for your help…and all of your fantastic recipes. 🙂

      Yes to all. 🙂 The cookies would be fine made a day ahead and the frosting would work with all butter, or with some cream cheese.
