Strawberry Banana Frozen Yogurt Cupcakes
These Strawberry Banana Frozen Yogurt Cupcakes made with Yoplait yogurt are super easy to put together! They are the perfect after school snack for all the kids heading back to school – and are even perfect as an after work snack for the adults. 😉

Yogurt is definitely one of those foods that I can eat any time of day. It’s obviously awesome for breakfast but also makes a wonderful snack. One thing I love about these cupcakes is that they not only double as breakfast and snacks, but they also turn yogurt into dessert. Basically you can eat these all day. 😉 They are easy to make ahead and store in the freezer so you can grab one whenever a snack craving hits. And since they are made with bananas, Yoplait Original (which contains 6 grams of protein!) and a couple cookies, they are just about guilt free!
The first thing you’ll want to do is slice up your banana and freeze it. The yogurt and the banana are the main ingredients in these cupcakes. When the frozen banana slices are puréed, it turns into a creamy ice cream. I used Yoplait Original Strawberry yogurt in these cupcakes, which adds an even creamier consistency and even better taste. It’s strawberry banana heaven!
I also added a little bit of a crust on the bottom. This makes the cupcakes a little bit easier to handle since they are frozen. And rather than going with something you might expect, like granola, I decided to use vanilla wafers as my crust. I just crumbled up some wafers in the bottom to keep it nice and simple. Easy peasy. That little bit of sweet and crunch goes perfectly with the frozen yogurt.
The other great thing about using Yoplait yogurt in these is that it makes it really easy to switch up the flavors so you never got bored. Yoplait has more than 100 flavors of yogurt so the options are endless. I mean, hello Caramel yogurt. Caramel Banana sounds like it should be the next flavor I try. What do you think?

Description

Ingredients
- 8 vanilla wafers
- 1 large banana, sliced and frozen
- 6 oz Yoplait Original Strawberry yogurt
- Strawberry slices, optional
- 1/2 cup heavy whipping cream
- 1/4 cup powdered sugar
- ½ tsp vanilla extract
Instructions
1. Add cupcake liners to a cupcake pan. You’ll need 4 liners.
2. Break vanilla wafers into pieces and put them into the bottom of the cupcake liners.
3. Put the frozen banana slices and strawberry yogurt into a food processor. Puree until combined and smooth.
4. Place a few strawberry slices on top of the cupcakes, if desired.
5. Place the cupcakes in the freezer until firm, 4-5 hours or overnight.
6. The cupcakes can be served as is, or can be topped with whipped cream.
7. To make the whipped cream, add the heavy whipping cream, powdered sugar and vanilla extract to a mixing bowl fitted with the whisk attachment. Whip until stiff peaks form.
8. Pipe swirls of whipped cream onto the top of the cupcakes and finish them of with an additional strawberry slice.
Cupcakes can be frozen with whipped cream on top and can be made and stored in the freezer for 7-10 days.
Notes
You’ll need about 2 wafers per cupcake. The number of wafers you’ll need will vary depending on how many cupcakes you end up with.
