Reese’s Peanut Butter Chocolate Cookie Sandwiches

These Reese’s Peanut Butter Chocolate Cookie Sandwiches are moist, chewy chocolate pudding cookies full of chopped mini Reese’s. They are sandwiched around a delicious peanut butter cream cheese icing to make a wonderful cookie sandwich.

Reese’s Peanut Butter Chocolate Cookie Sandwiches

So my gym has a pretty sweet little media room. I know, a media room at a gym? What’s that like?

Well, they have a weekly schedule posted outside of the room that tells you which movie will be playing each day of the week. It’s one movie a day and it plays on repeat. The room is mostly dark, but you can still see what you’re doing. There’s bike machines, treadmills and ellipticals.

Why did it take me so long? Well, partly because they don’t always play a movie that I really feel like watching. Also partly because I don’t just do cardio during my workout. I also use weights and machines. And often, I forget about the media room since it’s kind of in the back of the gym. I usually remember it when I’m going to do weights and by then my cardio is done.

But when I went to the gym earlier this week, I saw that Thursday was the movie Divergent. I knew at that moment that it would be the first time I used that room.

I did not want to go to the gym yesterday. One side of me tried so hard to give the other side a good reason to not bother. It’s so cold (like 18 degrees!)! I have things to do, things to bake. I have to walk the dogs (we are dog sitting my brother’s dog so there’s 2 of them right now). So many good reasons to drive right on by it on my way home. I literally drive RIGHT by it.

But I didn’t. I went. I needed to get more Fitbit steps. Then I got there and remembered Divergent! And I was so glad I didn’t drive past! I own the movie, but whatever.

I was pretty sore from my workout on Wednesday with lots of weight, so I planned on just doing cardio. So the cardio media room was just perfect for last night. And I walked into the room right around the part that starts to get interesting (capture the flag) and left when it started being less about Tris and Four and more about other things (the serum and taking down Abnegation).

Perfect. Just me, a treadmill and Four. Plus, like 6 or 7 other people. Bring it.

Of course then I came home and did another round of brownie baking and taste testing (recipe soon!) and the workout was a wash, but it’s gotta be done! Taste testing is a tough job, but somebody has to do it.

My small group was more than happy to be the taste testers of these chocolate cookie sandwiches. They were a big hit, but of course when is chocolate and peanut butter not a hit? I’ve had a few people ask when this recipe would finally be up on the blog so they could make them, so here it finally is.

The cookies are soft and chewy, with the help of a dry pudding mix. The chopped mini Reese’s are totally necessary, obviously. And the best way to make a peanut butter icing is with cream cheese. No joke, the icing was most peoples’ favorite part. Cream cheese + peanut butter = winning.

You know what else equals winning? Cookies + icing. They are just meant to be. Do it!!

Reese’s Peanut Butter Chocolate Cookie Sandwiches

Description

These Reese’s Peanut Butter Chocolate Cookie Sandwiches are moist, chewy chocolate pudding cookies full of chopped mini Reese’s. They are sandwiched around a delicious peanut butter cream cheese icing to make a wonderful cookie sandwich.


Ingredients

REESES CHOCOLATE COOKIES 

  • 3/4 cup salted butter, room temperature
  • 3/4 cup sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2 cups all purpose flour
  • 2 tsp cornstarch
  • 1 tsp baking soda
  • 3.4 oz package dry instant chocolate pudding mix
  • 2 tbsp cocoa powder
  • 1/2 cup mini Reeses, chopped
  • 23 tsp milk

PEANUT BUTTER CREAM CHEESE ICING 

  • 4 ounces cream cheese, room temperature
  • 1/4 cup butter, room temperature
  • 2 1/2 cups powdered sugar
  • 1/3 cup smooth peanut butter
  • 12 tbsp water or milk, if needed

Instructions

1. Preheat oven to 350 degrees.
2. Cream butter and sugars together until light and fluffy, about 3-4 minutes.
3. Mix in egg and vanilla extract.
4. With the mixer on low speed, add flour, cornstarch, baking soda, dry pudding mix and cocoa powder.
5. Stir in chopped Reeses. Add milk, if needed, to help dough come together. Dough will be thick.
6. Make balls of about 1 tbsp and then flatten a bit into thick discs and place on cookie sheet. They will spread a little while they bake.
7. Bake for about 7-8 minutes.
8. Remove from oven and allow to cool for 2-3 minutes on cookie sheet, then transfer to cooling rack to cool completely.
9. While cookies cool, make icing. Beat the cream cheese and butter until smooth.
10. Slowly add 1 1/2 cups of powdered sugar. Mix until combined.
11. Mix in the peanut butter.
12. Add the rest of the powdered sugar and mix until smooth. Add water or milk until it’s a smooth consistency.
13. Once cookies are cool, make cookie sandwiches.

    OH MY GOODNESS! These cookies are absolutely amazing and quite possibly the BEST cookie I have ever had! The cookie is moist and the peanut butter cream is sooo good!! I wasn’t excited at the thought of having to refrigerate them because I thought it might make the cookies hard but let me
