These Red Velvet Cookie Sandwiches are moist, chewy and taste just like red velvet in cookie form. They are filled with a delicious cream cheese icing and sprinkled with festive Christmas sprinkles – perfect for your holiday cookie tray or handing out to neighbors and friends! They’d even be great for other holidays – like Valentine’s Day or 4th of July – just switch out the sprinkles and you’ve got a holiday-appropriate treat. 🙂
I just love long weekends, don’t you? It was so nice to relax a little bit. I did a little shopping, trying to get some Christmas stuff done. I didn’t accomplish too much, but I did get some cute new Christmas ornaments and pieces for our nativity scene. We got delayed on getting our Christmas tree, which happened last year too, and we finally got it up last night. Our living room no longer looks like Christmas boxes just exploded everywhere.
My mom gave me a bunch of old Christmas decorations that she didn’t want anymore, so I’m excited to try some different things with my decorations this year. I’ve got all kind of trinkets and things I remember from growing up, so I’m excited to switch it up and see where it all ends up.
I’ve been pretty into switching things up lately. We painted the living room and now I’m ready to change out the rug and throw pillows and add curtains. And I finally just want to decorate the house a little more thoroughly. We’ve lived in it for 4 years. I think it’s time. Some rooms don’t even have anything on the walls.
We actually had a pool/ping pong table in our not-so-formal formal living room until recently. It’s my sister’s and she’d moved out of her house for a while so we were using it. Since my blogging stuff (props, photography setup, etc) has started to take over the dinning room and it’s almost unrecognizable as such a room, we returned the pool table and decided to turn the formal living room into my office.
I can’t even begin to tell you how excited I am to get that set up! Oh the things I can do with the space!
I am most excited to get some kind of shelving to put all my plates, cake stands and other props on. Not only will it finally be organized, but I think it’s all beautiful stuff. Even when all mixed and matched, I love how they all look together. Art in it’s own way. 🙂
And finally the dining room will no longer look my blog exploded all over it. A clean dining room and new office will be my Christmas present to myself.
And if you can’t gift an office, these Red Velvet Cookie Sandwiches would totally make a fun little Christmas cookie to gift to someone. You could easily wrap them up in a cute bag or put them on a plate and share at a party or hand them out. Who doesn’t love a good, edible treat? The best gifts are edible, in my opinion.
They are so easy to make too. I love that about cookies. And they’re so festive with the sprinkles. Sprinkles make me happy.
I added a pudding mix to the batter, though that could be optional if you don’t like to use pudding mix or don’t have access to it. Without it, the recipe won’t really change, but with it the cookies are extra soft and stay moist for days and days. It actually helps make these great cookies for mailing. They are pretty sturdy when sandwiched together and should be good in the mail for a couple days.
And cream cheese icing? Well, it’s the perfect match for red velvet, don’t you agree?

- 3/4 cup salted butter, room temperature
- 3/4 cup sugar
- 1/4 cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1–2 tsp vinegar
- 1 1/2 tbsp red food color (less than 1 ounce)
- 2 cups all purpose flour
- 2 tsp cornstarch
- 1 tsp baking soda
- 3.4oz package dry instant vanilla pudding mix
- 1 tbsp cocoa powder
- 1–2 tsp milk
CREAM CHEESE ICING
- 6 oz cream cheese, room temperature
- 3 tbsp butter, room temperature
- 3 tbsp shortening
- 3–4 cups powdered sugar
- 1/2 tsp vanilla extract

How long can these be left out?
I’d use your best judgement with the cream cheese icing. I’d think a couple hours or so should be fine.

I used Ateco tip 844 – a closed star tip.
I always use baking stones rather than cookie sheets. Do you recommend still using parchment paper on the stones? Thanks! These look AWESOME!
Wow, I’ve never used a baking stone. How cool! If you don’t usually use parchment paper with it, then you probably don’t need to. It just needs to be a non-stick surface.

This recipe looks wonderful! I want to try it for a Christmas party this weekend. One question on the recipe is step 5 mentions stir in chocolate chips and milk if needed. I don’t see chocolate chips on the ingredients..how much is needed if any at all? Thanks!
