Description
This Quick and Easy Chicken Fried Rice only uses 8 simple ingredients! It’s such a great lunch or dinner recipe that’s guaranteed to hit the spot every time!
Ingredients
- 6 cups cooked white rice
- 8 tbsp olive oil
- 4 eggs
- 2 tsp salt
- 1 tsp pepper
- 6 tbsp soy sauce
- 2 1/4 cup shredded rotisserie chicken
- 1/2 cup chopped green onion
Instructions
1. Cook rice according to package.
2. In a bowl, beat salt and pepper with eggs
3. Heat 4 tbsp of olive oil over medium-high heat. When hot, add eggs and lightly scramble.
4. When eggs are cooked, remove them to a separate plate. Clean off pan.
5. Add 4 tbsp of olive oil to pan.
6. Add rice to olive oil and stir for a minute.
7. Add soy sauce, chicken, and green onion. Combine.
Notes
You can add more soy sauce if you like. I prefer a combo of low sodium and full sodium soy sauce to get a fuller flavor without quite as much sodium.
