Chocolate Cookie Cups with Nutella Cheesecake Filling

So we just got back last night from spending a long weekend in Hilton Head, S.C. with my family. Hilton Head is an annual trip for us. We’ve been going since I was a kid and it holds so many memories for me. Even the hubs has been coming with my family since we were in college.

It’s such a great beach for families – so clean and laid back. I look forward to hopefully being able to bring our kids to Hilton Head one day.

Before we left yesterday, the hubs and I decided to spend as much time at the beach as we could. It ended up being the day with the best weather, so we stayed later than we thought we would.

One fun thing about the beaches is that we always see dolphins swimming off the shore at least once. If you know me well, you know I LOVE dolphins. They are easily my favorite animal and every time we see them, I wish they’d swim up to me and carry me out to sea with them for a day. I’d just chill on their backs or something and be one with the dolphins. They totally want to hang out with me, they just don’t know it yet.

We hadn’t seen them yet this trip and I was a little bummed. Well, yesterday we fixed that. We saw some swimming down the shore around midday and then we were walking along the beach yesterday afternoon and we saw a ton of them!

Fish were jumping like crazy all day long – more than I’ve ever seen at a beach. It was just constant. The dolphins basically had an all you can eat buffet going on. It worked out well for us, because we had to have seen more than 20 dolphins in all after watching them all swim by.

We walked down closer to the water just in time to see one come in really close – there wasn’t anyone in the water in this spot – and go after fish. He was so close, you could see him through the water. His fin was up out of the water and his head was pushing a wave forward as he kept coming out of the water to get the fish. He even gave us a big, full jump out of the water – like the ones they do in shows. It was beautiful!

A few minutes later we saw another one jump out too. I’m a total dork over dolphins and it made my day.

It’s amazing how everyone on the beach stops and watches the dolphins. They are just the prettiest and coolest animals. There were some people out on paddle boards and the dolphins were so close to them. I made a mental note about that one. I see paddle boards in my future for next year’s trip. 🙂

As for these cookie cups, I see them happening in my future as week – again.

Tips for Making Nutella Cheesecake Cookie Cups

The cookies are soft and chewy and perfectly chocolatey. As usual, I used my Hershey’s Special Dark Cocoa, which I recommend. But you can replace it with regular cocoa, if you’d like.

The Nutella cheesecake is no bake and absolutely delicious. Smooth and creamy, I wanted to pipe it straight into my mouth. There was a tad bit left after filling the cookie cups and I couldn’t part with it. We piped it onto Nilla Wafers and eat it that way too. So stinkin’ good.

I topped them with off raspberries for two reasons. 1. It compliments the sweet Nutella perfectly. 2. They finish them of perfectly and make a pretty presentation.

These cookies make perfect individual treats and are a fun mix of two great things – cookies and cheesecake. They’re also perfect for that holiday tray you’ll be taking to parties soon. 😉

Nutella Cheesecake Chocolate Cookie Cups

Description

These Nutella Cheesecake Chocolate Cookie Cups have a soft, chewy chocolate cookie base filled with the creamiest no bake Nutella cheesecake. They’re cute, delicious, and perfect for sharing – or not!


Ingredients

CHOCOLATE COOKIE CUPS

  • 3/4 cup butter, room temperature
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all purpose flour
  • 1/2 cup cocoa
  • 1 tsp baking soda
  • 2 tsp cornstarch

NUTELLA CHEESECAKE

  • 10 oz cream cheese, room temperature
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 3/4 cup Nutella
  • raspberries, for garnish, optional

Instructions

1. Coat cupcake pan with non stick cooking spray. Preheat oven to 350 degrees.
2. Cream butter and sugar together for 5-7 minutes, until light and fluffy.
3. Add the egg and vanilla and beat until well combined.
4. Add the dry ingredients to the wet ingredients and mix until smooth. Dough will be thick.
5. Makes balls of about 2 tbsp of dough. Press cookie dough in bottom and about 1/3-1/2 way up the sides of each cupcake cup, forming a cup shape.
6. Bake for 10-12 minutes.
7. Remove from oven and allow to cool for about 5 minutes, then remove to cooling rack to finish cooling. The centers should fall a bit while cooling, but if the centers aren’t cupped enough to add filling, use the end of a wooden spoon or the bottom of a tablespoon to press the center down a bit.
8. Once cookie have cooled, make the cheesecake filling. Blend the cream cheese, powdered sugar, vanilla and Nutella together until smooth.
9. Pipe or scoop cheesecake filling into cookie cups.
10. Top with raspberry, if desired.
11. Store in refrigerator.

    This recipe is TO DIE FOR!! The only thing that I experienced was they kind of fell apart when I took them out the the pan. So, I ended up baking a second batch and used silicone muffin cups to bake them in. I’m quite sure I will be making these again

    These look amazing! Making them tonight for dinner tomorrow, how long can they be stored in the refrigerator for? Is it okay to leave them in the fridge overnight? Would I need to leave them at room temperature for a bit before serving?

      Yes, they are best stored in the fridge. They can be stored in the fridge for up to several days, I’d say 3-4 days at the most for them to be freshest. I personally like these best when cold because of the cheesecake, but you could definitely let them sit at room temperature for a bit.

    So, these are cookie cups? does it taste like a frosted cookie?
