This all fruit watermelon cake is so easy to make! And with only fruit used to make it, does it get any healthier? I don’t think healthy’s ever looked this good! 😉

And for those trying to lose or watch their weight for a New Year’s Resolution, this cake is the perfect way to celebrate an occasion and not break the calorie bank. Gotta love that!

Personally I’m not really into resolutions. Calling it a New Year’s Resolution makes it no more likely that I’ll stick to it. I figure if I really want to make a change, I’ll just do it – no matter what time of year. And I’m pretty much always trying to eat better and workout regularly – a blog full of tasty treats kind of makes that necessary.

And lately I have not been terribly motivated. Between all the traveling for the holidays and having back issues for the first time ever (it made me feel SO old), I hadn’t seen the inside of the gym for close to a month.

Speaking of my back – I literally woke up one day with a little pull in my lower back that I thought would just go away only to find myself unable to even stand up by late afternoon. It was no fun. I went the the chiropractor for the very first time. You have no idea how much you need your back until you no longer have it.

Anywho, my back still isn’t in perfect condition, but I finally got back to the gym last night. I’m not going to lie, I almost didn’t make it. I mean, hello Arctic old air and 13 degrees! I just wanted to go home and plop myself in front of the fire.

But I went and I was glad I did. It felt good to get moving and I got to catch up on some of my People magazines doing my cardio.

This time of year, there’s always more people than usual and that was true last night. I was surprised though to find so many guys! Clearly they are the ones making the weight related resolutions this year!

Ironically enough, this cake was made for a co-worker who is a guy and has been trying to lose some weight. I like to make birthday treats for my co-workers. It’s kind of a win-win. I get to make something for the blog and then give it away so I don’t have to eat all of it. They get cake.

But for someone who’s been trying so hard to be good, I decided to help out with this all fruit cake. It was a total score – he loved it! And because it’s guilt free, more of it was eaten than when I bring in the real thing, haha. I need to go back to working at a newspaper – they devoured everything! 🙂

But seriously, unless you don’t like fruit, there’s no way you won’t love this fruit cake. It’s a great alternative and you don’t have to turn on your oven or making icing or anything too crazy.

It may seem intimidating, but it’s pretty much just slicing fruit, so no worries. And if you work quickly you can make it in an hour or two. Definitely a winner!

All Fruit Party Cake

Description

This All Fruit Party Cake is super fun and easy to make! If you love fresh fruit and bright colors, this is the perfect cake for you. It also makes a great gift!


Ingredients

  • one watermelon
  • one pineapple
  • 2 kiwis
  • 45 oz blueberries
  • a few handfuls of grapes
  • toothpicks
  • 2 wooden skewers
  • star cookie cutter (preferable metal, to cut through pineapple)

Instructions

NOTE: These directions are for the same cake in the pictures above. The watermelon used was smaller because it wasn’t watermelon season. If you have a larger watermelon, you will likely need more fruit for decorating. The diameter of the final rounded watermelon part of this cake was about 6 inches.
1. Cut the top and bottom off of the watermelon. (see picture above)
2. Cut the four sides of the watermelon off, leaving a square shaped watermelon with corners that still have rind on them. (see picture above)
3. Shape the watermelon into a rounded cake shape, beginning by carefully trimming back the four corners. Shave small pieces at a time so that you don’t remove too much. (see picture above)
4. Cut 3-4 slices of pineapple about 1/4 to 1/2 inch thick. Depending on the size of the pineapple and star cookie cutter, you should be able to get at least 2 star pineapple cutouts per slice.
5. Use a teaspoon to scoop out balls from leftover watermelon removed from top, bottom and sides in steps 1 and 2. (these are for the base of the cake, next to the kiwi slices)
6. Peel and slice kiwi.
7. To make the star pineapple grape and blueberry sticks: Add in this order – one grape, one blueberry, one grape, one blueberry, pineapple star. Only push them down far enough for the pineapple star to have the skewer about half way through. You don’t want it to poke out of the top of the star. Add the star sticks to the cake.
8. Breaking toothpicks in half, stick the sharper end into the bottom of the blueberries. Stick the other end of the toothpicks into the watermelon to line the top edge with blueberries.
9. Stick toothpicks into the other 3 (or more) pineapple stars and stick them into the sides of the watermelon, spacing them evenly around the outside of the watermelon.
10. Place overlapping slices of kiwi around the base of the watermelon.
11. Place watermelon balls around the base of the watermelon, next to the kiwi.
12. Use remaining blueberries and grapes to fill in the remaining area around the base of the watermelon.
