This Herb Chicken Cobb Salad is full of flavor and great for summer! It’s got all of your classic Cobb Salad toppings with a delicious herb chicken and homemade honey mustard dressing!
Herb Chicken Cobb Salad
This salad is so good! I like to think of it as a fancy Cobb Salad and I’m totally in love with it. It’s not your average Cobb salad – it’s elevated with the addition of feta cheese and the herb chicken. Honestly, the chicken would be delicious on it’s own, but when added to this salad, it just takes it up a notch. Plus, it’s super easy to make.
The only way to make this salad even better is the homemade honey mustard dressing. It would be delicious with any salad, but it totally completes this Cobb salad. The flavors are all so wonderful together. You’re going to want to eat it night after night. And it’s such a simple recipe to put together, you totally could.
Ingredients
The ingredients in this salad are pretty straight forward. Aside from the fresh ingredients, you should have most things handy.
Chicken
- Chicken breast: Skinless and boneless is best, but chicken thighs could be used instead.
- Bacon: Diced and trimmed of all fat. If you want to save on time, you could use 2-3 tablespoons of bacon bits.
- Olive oil
- Spices: Oregano, rosemary, thyme and parsley are all used.
- Garlic: Two minced cloves.
- Salt and Pepper
- Honey
Honey Mustard Dressing
- Dijon Mustard: Not yellow mustard.
- Honey
- Olive oil
- Lemon juice: I always recommend freshly squeezed lemon juice.
- Salt and pepper
Salad
- Mixed greens
- Cherry tomatoes
- Red onion
- Eggs: Hard boiled eggs. Feel free to slice them, chopped them, whatever your preference.
- Feta cheese: You could also try some goat cheese.
- Avocado slices: Slice them just before serving the salad so they don’t brown.
How to Make Herb Chicken Cobb Salad
- Preheat Oven: To 375 F (190 C).
- Prep Chicken: Add the chicken and bacon to a 9×13 casserole dish and set aside.
- Combine Chicken Marinade: Add the oil, oregano, rosemary, thyme, parsley, garlic, salt and pepper to a measuring cup and stir it all together. Pour the mixture evenly over the chicken.
- Bake: Bakefor about 10 minutes, then drizzle the honey over the chicken breasts. Continue baking for another 5-10 minutes or until the chicken reaches an internal temperature of 165 F.
- Prep Dressing: In a small bowl, add the Dijon mustard, honey, oil, lemon juice, salt and pepper. Mix together, cover and store in the refrigerator until ready to serve.
- Make Salad: To make the salad, arrange the greens, tomato, onion and eggs in individual serving bowls.
- Finish Salad: When chicken is cooked, slice and place each breast in a bowl. Top with feta and avocado.
- Serve: Serve immediately with honey mustard dressing.
Suggestions for this Cobb Salad
- More Toppings: If you want to change it up, consider adding dried cranberries, nuts or sliced apples.
- Make Ahead: Add the chicken and seasonings to the casserole dish ahead of time. Refrigerate it all together to marinate until you’re ready to cook it. You could also cook the chicken ahead of time and keep it in the fridge for up to 3 days prior to serving.

- 4 skinless, boneless chicken breast (about 2 lb)
- 5 oz bacon, diced and trimmed of all fat
- ¼ cup olive oil
- 1 tsp dried oregano
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1 tsp dried parsley
- 2 garlic cloves, minced
- Salt and pepper to taste
- 4 tsp honey
Honey Mustard Dressing
- 4 tbsp Dijon Mustard
- 6 tbsp honey
- 4 tbsp olive oil
- 2 tsp fresh lemon juice
- Salt and pepper
Salad
- 8 cups mixed greens
- 5 oz cherry tomatoes, halved
- 1 small red onion, sliced
- 4 hard boiled eggs, sliced
- 1/2 cup crumbled feta cheese
- Avocado slices
Instructions
- Preheat the oven to 375 F (190 C).
