This Easy Fruit Salad takes a simple side dish of mixed fruit and elevates it with a lovely honey lime dressing! It’s a delicious way to dress up your fresh fruit and perfect for summer!
Easy Fruit Salad
One of my favorite things about summer is all the delicious fruit. It’s hard to beat something that’s good for you and tastes so good! I’m a lover of most fruits, but this fruit salad definitely contains most of my favorites. It’s a nice combination of berries and citrus fruits, along with a staple for us – bananas.
To make this fruit salad even better, it’s got a light honey lime dressing on it. A dressing like this is definitely my preferred way to go. Creamy dressings made with whipped cream or pudding take away from the fruit, whereas this one just amplifies the flavors that are already there.
Ingredients
Be sure to use fresh fruit, not frozen. Frozen fruit tends to be mushy once thawed.
- Strawberries: Look for ones that are red with no soft spots. To be sure they have great flavor, give them a sniff. You may look a little funny in the store, but you can absolutely smell a good strawberry right in the package. If you can’t smell anything, they likely don’t have great flavor.
- Pineapple: I used fresh pineapple that was already cut into chunks, which they sell in our grocery store. I just cut the chunks a little smaller. Feel free to grab a full fresh pineapple.
- Blueberries: I look for ones that are nice and plump and preferably a little bigger in size. I find they tend to have my preferred flavor.
- Grapes: Red or green with work here. Look for ones that are plump and not soft looking. I also prefer grapes that are a little bigger. Smaller ones tend to be more sour.
- Kiwi: Picking out kiwi is a little like picking out avocado. You don’t want it to be too soft or too firm.
- Mandarin Oranges: I just used canned. Be sure to reserve two tablespoons of the juice for the dressing.
- Bananas: Ripe, yellow bananas are best. If they are too brown, they’ll be mushy.
- Honey: The base for the dressing.
- Limes: Use the zest and the juice for flavoring the dressing.
- Vanilla Extract: I love using a little vanilla for extra flavor.
How to Make Fruit Salad
This fruit salad couldn’t be easier to make. Just three simple steps!
- Prep fruit: Chop and slice fruit, then add it all to a large bowl.
- Make dressing: Combine the honey, lime zest and juice, mandarin orange juice and vanilla extract in a small bowl or measuring cup.
- Toss: Gently toss the fruit and dressing together.
Can I make Fruit Salad in Advance?
Fruit salad can be a little tricky to make ahead. Once fresh fruit is washed and chopped, it starts to go bad more quickly. I recommend making and serving it the same day. If you want to make it earlier in the day and serve it later, you could chop all the fruit except for the bananas and make the dressing, then slice the bananas and combine everything shortly before serving.
With that in mind, saving leftovers is fine, but keep in mind that the fruits start to not be at their best after sitting for a while.
