This Easy Bruschetta Chicken recipe is made with tender chicken breast pieces coated in garlic and spices that are grilled, then topped with a fresh tomato and basil topping. A little drizzle of balsamic glaze takes the flavors over the top! A quick, low-carb, delicious dinner idea that’s perfect for busy weeknights.
So since about February, when the boys turned one, I’ve been working on losing the baby weight and trying to feel more like myself. I typically work out in the mornings before they get up and have been doing my best to eat well. The eating part is not an easy task when you primarily bake for a living. But I feel like a bit of a pro at dieting (for lack of a better word) since I’ve been doing it since I was a kid.
I actually went on my first diet when I was in middle school. That might seem a little nutty, but I was picked on for my size and wanted to lose weight, so I did. Back then I did a low carb diet and had great results, so that’s always what I fall back on when I’ve got a little weight I want to lose. The problem with a low carb diet is that the food can be super boring.
Enter this Easy Bruschetta Chicken recipe. So much flavor, easy to make and anything but boring! The perfect way to add some excitement to your meals!
Whether you’re looking for a low carb meal or just a tasty dinner, this chicken is flat out amazing.
What is Bruschetta?
While we Americans know bruschetta as grilled or toasted bread that’s topped with a tomato, garlic and basil mixture that sometimes includes balsamic vinegar (which is how I like it), that’s actually not what it is traditionally.
The Italian way is actually grilled bread that’s been rubbed with garlic, olive oil and salt and topped with anything from tomatoes to beans or cured meat. Yum!
While I would love to journey to Italy one day to try it the traditional way, today we are working with our American version. It’s easily one of our favorite appetizers and one I’ve abstained from lately because of the bread.
Fortunately I can get my bruschetta fix with this Easy Bruschetta Chicken! Who needs bread when we all know it’s the tomatoes, garlic, basil and balsamic vinegar that makes this dish a party?! Seriously, I could just sit down with the tomato topping and eat it with a spoon. LOVE!
How to make Bruschetta Chicken
The first thing you’ll want to do is make the tomato topping. I suggest using Roma tomatoes. If you can’t find those specifically, look for another more firm tomato that will be easier to cut and not give you a mushy topping.
Next, you’ll want to mince your garlic and add that to your tomatoes, along with some olive oil and balsamic vinegar.
Finally you’ll add some fresh chopped basil (which I don’t think you can ever have too much of) and some salt and pepper. Stir it all together and set it aside while you work on the chicken.
When it comes to the chicken, we tend to grill it around here. The husband enjoys it and is quite good at it. Plus, we just really like the way grilled meat tastes. But you could also do it in a skillet or the oven.
Assuming you’re going to grill it, the hubs has some special instructions he wanted me to be sure to include. But first, you’ll need to rub the chicken with olive oil and some seasoning.
Next, the hubs instructs that the chicken is best when allowed to sit out for about 30 minutes prior to grilling. Then you’ll grill it for about 7-8 minutes on each side, until cooked through. Finally, let it rest for 5 minutes before serving.

Once you’ve got that beautifully grilled chicken, top each piece with a piece of mozzarella cheese, let it melt, then top it with your tomato mixture and a drizzle of balsamic glaze.
What is balsamic glaze?
Balsamic glaze is basically balsamic vinegar that has been cooked down to thicken it. You could totally do that on your own, but in the interest of keeping things simple and easy, I buy it. Look for it next to the olive oil and vinegar in your grocery store. It’s amazing and I pretty much slather it all over my Bruschetta Chicken.
How to serve Bruschetta Chicken
There are any number of things you eat with this chicken, but I’ve been enjoying zucchini noodles lately for a low carb option. The hubs is a fan of rice and will even stir a little extra balsamic glaze in there. You could also try mashed potatoes, pasta or even cauliflower rice.
However you serve this Bruschetta Chicken, you have to try it! It’s super simple, has amazing flavor and is sure to be a hit!

Ingredients
Tomato Basil Topping
- 2 cups (260g) diced Roma tomatoes (5–6 tomatoes)
- 1 head of garlic, minced
- 1 1/2 tbsp olive oil
- 1 1/2 tbsp balsamic vinegar
- 5 tbsp (9g) fresh chopped basil
- 1/4 tsp salt
- 1/4 tsp black pepper
Chicken
- 4 boneless skinless chicken breasts
- 1 tbsp olive oil
- 2 tsp Italian seasoning
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/8 tsp black pepper
- 4 slices mozzarella cheese
- 4–5 tablespoons balsamic glaze
Instructions
1. In a medium sized bowl, combine the tomatoes, garlic, olive oil, balsamic vinegar, basil, salt and pepper. Stir to combine and set aside.
2. Prepare your chicken breasts. You can pound them to even thickness or leave them as is. Coat the chicken with the olive oil.
3. In a small bowl, combine the Italian seasoning, garlic powder, salt and pepper. Coat the chicken breasts evenly with the seasoning.
3. Grill the chicken over high heat for 6-8 minutes per side or until cooked through.
4. When the chicken is cooked, top each piece with a slice of mozzarella cheese and allow it to melt.
5. Remove the chicken from the grill and let it rest for about 5 minutes. Top the chicken with the tomato basil topping and a drizzle of balsamic glaze and serve.

Can you elaborate on what you mean by a “head” of garlic? I can’t imagine you are referring to the entire garlic bulb?
I don’t have a grill, so how long and how high would I cook the chicken?
I actually did use a full head/bulb of garlic, but you could certainly cut that back if you aren’t as into garlic. If you’re looking to cook the chicken in the grill, I’d suggest baking it at 450 for about 18-20 minutes, depending on the size of your chicken breasts.
