Caramel Pretzel Nutella Brownies

This dessert came about from my love of three things. Can you guess what they are?

If you said Nutella, pretzels and caramel, you’d be right! Tough one, huh? 😉

I’ve been wanting to make a Nutella brownie for some time and I finally got around to it! But because I don’t like anything to be too simple (flavor-wise), I thought, “What can I combine with Nutella to make this brownie even better?!”

Pretzels popped right into my head! After making these Chocolate Covered Nutella Pretzel bites, I know Nutella and pretzel are a wonderful combo! And I considered just mixing them into the brownie, but that seemed…not right. So I made a crust! Yay for sweet and salty!

But then I thought it needed more. Because less is not always more. And since caramel seemed like the perfect compliment, I decided to drizzle it over these fabulous brownies!

But before I continue on about the brownies, how was your weekend?

I hope it was lovely! I did some baking, some shopping (Miami and BlogHer Food conference, here I come!), some relaxing on the lake…and I gave our black lab, Jessie, not one, but two showers.

Now before you tell me that it’s bad to wash a dog that much, let me say that I know. And I did not want to do it.

But she came running into our house two days in a row with her head absolutely covered in poop. It was smelly and gross. I had no choice.

I have no idea where it came from. The hubs went hunting along the hill behind our house to see if there’s a rabbit hole or something that she keeps sticking her head into to get to ahold of an animal, but couldn’t find anything.

All I know is that we are going to have to keep a close eye on her for the next few days because if she does that again, I don’t know what I’ll do. No more showers! And both times, she came running in the house right in the middle of baking. Doesn’t she know I’m baking! 🙂

But back to the brownies…these are a variation on my Quick and Easy Brownies I shared not too long ago. I absolutely love those brownies, so I knew they’d be a great place to start.

I replaced the cocoa with Nutella and changed things up a bit and they are delicious! More of a cakey brownie than a fudgy one. But they are moist, chewy and delicious!

And the combo of sweet and salty is perfection! They have that nice, brownie crust on top and are super easy to put together.

One thing to note is that they are kind of crumbly because of the pretzel crust. When you cut them into squares, you’ll notice it, but it’s not a problem. Just wanted to note it for you so you know you didn’t do anything wrong when you make them.

I made a few batches to make sure they were just right and these were a hit!

Caramel Pretzel Nutella Brownies

Description

These Caramel Pretzel Nutella Brownies are the ultimate sweet and salty dessert. They’re made with a pretzel crust, a fudgy brownie center and a layer of caramel drizzle on top! So good.


Ingredients

PRETZEL CRUST

  • 3/4 cup pretzel crumbs
  • 6 tbsp butter, melted

BROWNIES

  • 3/4 cup veggie oil
  • 3/4 cup Nutella
  • 1 1/2 cups sugar
  • 1 1/2 tsp vanilla extract
  • 3 eggs
  • 1 cup flour
  • 1/4 tsp + 1/8 tsp baking powder

CARAMEL DRIZZLE

  • 6 oz kraft caramels (about 20 caramels)
  • 2 tbsp butter
  • 1 tbsp milk

Instructions

1. Preheat oven to 350 degrees. Line the bottom and sides of a 9×9 square baking pan with parchment paper, allowing two sides to stick up so that the bars be lifted out of the pan when done.
2. Mix together crushed pretzel crumbs and melted butter and press into the bottom of the pan.
3. In a large mixer bowl, mix together the oil, nutella, sugar and vanilla extract.
4. Add eggs and mix until well combined.
5. Combine flour and baking powder
6. Slowly add to the egg mixture until well combined. Batter will be grainy.
7. Pour the batter into the pan and spread evenly.
8. Bake for 35-40 minutes, or until a toothpick comes out with a few crumbs.
9. Allow to cool completely in the pan, then lift brownies out of pan. Slice into bars.
10. Add caramels, milk and butter to a pan and melt over medium-low heat.
11. Drizzle caramel sauce over the bars and allow caramel to cool.
