This Brownie Brittle Peppermint Chocolate Pie recipe will get you in the holiday spirit. It’s a no bake dessert recipe that is full of Christmas flavors and so easy to make!

This Is One Of My Favorite No Bake Pie Recipes
One of the things I love about this pie is that it’s actually a no bake pie! No need to turn on your oven! You will use the stove, but not for long. This pie comes together so easily.
This Chocolate Pie Has A Delicious Brownie Crust
I started off with one of my favorite things in the crust – Brownie Brittle. It was my first time using Brownie as a crust and oh em gee, was it a good call. It’s like having a crunchy brownie crust without all the work of baking brownies. The taste is perfection.
The Brownie Brittle and some melted butter are combined and pressed into the bottom of the pie pan to make the crust. Once that’s ready, set it aside to make the filling.
How To Make Peppermint Chocolate Pie
The filling is made by melting chocolate chips into milk in a pan over the stove. Once the chocolate chips are melted and combined with the milk, a little more milk and cornstarch is added along with some peppermint extract. The cornstarch will help thicken the mixture to give you a thicker pie filling.
You’ll bring the mixture to a boil, which also helps to thicken the filling. Make sure to stir in constantly while it boils so it doesn’t burn or get clumpy. After about 2 minutes, pour the mixture into the crust and place it into the refrigerator to set. You’ll want to leave it for at least an hour, even longer if you want it thicker.
How To Make The Chocolate Ganache
After about an hour though, you can go ahead and add the ganache layer. Please do not be afraid of making chocolate ganache. I remember I was so afraid to make it for the first time, but once I made it and realized just how easy and not scary it was, I was hooked!
You place the chocolate chips in a bowl, preferably metal to help hold the heat. Then microwave the heavy cream until it begins to boil. Once boiling, pour the cream over the chocolate chips, cover tightly and let it sit for about 5 minutes. The cream will melt the chocolate chips and then you’ll be able to whisk it until smooth.
The ganache is poured over the top of the pie, then the whole pie goes back in to fridge until completely set.
What Toppings Go Best With This Chocolate Peppermint Pie?
Once ready to serve, you can top the pie with some whipped cream, peppermint crunch baking chips and even a little chocolate sauce if you want. I personally am a fan of a little extra chocolate. Why not? 🙂

You had one comment that said that their pie failed because the crust didn’t cut. As I making this I’m wondering why you don’t have to cook the crust. Any other cookie crust I’ve made had to be cooked is that why it’s falling apart? I just made it and I’m hoping mine doesn’t fail for Thanksgiving too because you don’t have us cook it. You’re directions didn’t miss that Did they
I’ve made plenty of recipes where the crust is baked and not baked. A not baked crust can have more crumbs and such, but it shouldn’t fall apart. You can always bake it though, if you prefer.
After all the baked pies and treats for Thanksgiving, I am going to be ready for a no bake peppermint pie like this one!! Gorgeous and it has me pining for Christmas already!!!

Where do you find brownie brittle? Never seen it before!
You should be able to find it in the grocery store. It’s in the deli section in ours. I’ve also seen it at Costco.
