These Baileys Chocolate Cookies are so moist, chewy and delicious! They have just the right amount of Baileys flavor – not too overpowering, but definitely there. And the white chocolate on the outside gives them that extra chocolate touch!

I think these might be my new favorite cookie. They are definitely the hubsโ new favorite.
I got up last Saturday morning to make them before we left to go do some things that he need to do. I was trying to hurry since I didnโt want to make him late.
I was starting to think I was going to be short on time and have to put the dough in the fridge and finish the other half of the cookies later.
Then he tasted one of the cookies. All of a sudden he was trying to eat all of my cookie dough and steal all of my cookies.
Donโt mess with my cookies. At least not before I take pictures. I will take you down.
I told him the first batch was mine for pictures. If he wanted more cookies, heโd have to wait for the second batch.
So instead of fighting me for them, he decided it was totally worth it to wait the extra 10-15 minutes for me to finish the rest of the cookies.
A cookie worth waiting for? Iโd say thatโs a good cookie. ๐
I made these cookies a little smaller than usual. I tend to like big cookies. But since these were going to be dipped in chocolate, I thought smaller would be better. And I totally dug the smaller cookies. I’m sensing a change in my ways…
So the next day, I dipped the cookies in white chocolate and put some super fun St. Patricks Day sprinkles on them. Because duh. Sprinkles make everything better.
Of course the hubs disagrees. He thought it ruined everything. So I left some uncovered for him. Heโs clearly crazy.
Then when I tried to share my chocolate covered cookies, he gave me this look like – what are you doing with my cookies? And Iโm like, uh, the chocolate covered ones are mine – back off! In a nice way, of course. ๐
So I managed to get a couple cookies out of the house for my other trusted taste testerโs opinion. I like opinions.
The white chocolate was a winner. The cookie was a winner. And even though I made these thinking theyโre perfect for St. Patricks Day, theyโd really be perfect any day. Because they are awesome. If you like Baileys, chocolate and cookies, there is no way you wonโt like these. Unless you like super hard and dry cookies. Then these arenโt for you. ๐

- 3/4 cups butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/4 cup Baileys
- 1 egg
- 1/2 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/4 cup cocoa (I use Hershey’s Special Dark)
- 1 tsp cornstarch
- 1 1/2 cups white chocolate chips
- sprinkles, optional

Can you add baileys into the icing?? If so how much?

Love these! I have even added a touch of Baileys to the white chocolate (my Irish family loves Baileys). Also, I like to use a less expensive Irish cream liqueur when making these as well as my Baileys Irish Brownies.

Sure, why not?!
wondering if i am doing the dipping wrong i couldn’t get the white chocolate chips very liquid. is there a secret to that i don’t know?
Sometimes it depends on the brand of chocolate and the amount of fat. You could try adding a touch of corn syrup or shortening to thin it out, or use a melting chocolate specifically for baking, like almond bark or candy melts.
Am *so* pinning these – a baked treat w/ alcohol = all the yum.

Yeah, these look to die for. So soft and chewy without being uncooked. {It just took me, like, 10 minutes to type that because I kept scrolling up to gaze longingly at the cookies.}
Apparently in Atlanta you can’t buy Bailey’s in any size except HUGE and itty bitty, so I have this HUGE bottle of Bailey’s left over from some Bailey’s frosting, and I think this is the perfect use for {some} of it! Soooo excited. Cannoteventellyou.
