These Bacon, Beer and Potato Chip Cookie Bars are full of sweet and salty flair, plus all your favorite munchie-food guilty pleasures! Get ready to make a crazy good batch of cookie bars!
I hope everyone had a great Memorial Day. We spent the weekend with some family and friends, enjoying the lake, good food and warm weather.
The three day weekend was much needed – time to relax and recoup a bit. After being in Miami last weekend and going straight from having a sinus infection last week to waking up with strep throat Saturday morning, I needed the rest. Fortunately, the antibiotic kicked in quickly and other than slowing me down a bit Saturday, I was good to go!
Now I’m healthy and ready to take on the world! Starting with these bars.
What Goes into these Amazing Cookie Bars?
Let’s get a run-down of everything we’ve got going on in here. It’s cray –
- Bacon
- Beer
- Potato Chips
- Pretzels
- Caramel
- Chocolate Chips
- Peanut butter Chips
A party in your mouth!
I actually wanted to call this recipe “Man Bars.” That’s pretty much what I went around calling them when I got my taste testers involved. When I told the hubs that they were man bars, he said the only thing they were missing was motor oil.
Eww.
But then some of these bars’ greatest fans were not in fact men. I mean the men loved them, but women can and do love them too! So alas, the name “Man Bars” didn’t stick. However, I will still lovingly call them that on my own.
Instead, I went with a more descriptive name. Inviting for all. I don’t want anyone to feel left out.
But they are perfect for Father’s Day, aren’t they?! I mean what dad wouldn’t love to have a few of his favorite foods baked into a chocolate chip cookie? Mine would!
To be fair, not everyone loved these. They are a little different and the flavors can be a little strong. But if you’re a beer, bacon, potato chip and chocolate chip cookie fan and you think they’d all be delicious in one big mouthful, then these bars are for you! 🙂

Do these require refrigeration? I was considering making some to ship to a friend of mine and was curious if they would survive the trip
Hmm, I usually don’t refrigerate them. The baked part is totally fine. The caramel should be ok – I don’t think the beer would cause an issue if not refrigerated. The only potential issue is the milk in the drizzled chocolate on top. You could leave it out, the chocolate on top would just firm up, which might be better for shipping anyways.
These “man bars” are the best. My husband even loved the dough! Next time I’m adding a little heat by using jalapeno kettle chips.
I’m glad he enjoys them! 🙂 The Jalapeño kettle chips sound great!
Made these today for a gathering and they were a hit-even though I messed up the recipe. I accidentally used 2 full sticks of butter. Oops. I used 7×11 pan and they were really thick. I think a 9×13 might even work because they are so rich. I didn’t have peanut butter chips so I used jiffy and just spread a thin layer across the top before pouring the caramel. I also used Snyder’s peanut butter pretzel sandwiches and skipped the chocolate drizzle. I think one more slice of bacon inside and one more on top would be perfect.
I’m so glad you enjoyed them and were able to make them your own. 🙂
I made these for a retirement party for a couple of home brewers. I doubled the batch (60 people at the party), skipped the chocolate chips in the topping, used the whole bag of PB chips, and skipped the chocolate drizzle (ran out of time). Everyone LOVED them and I had very few leftovers, we left a little early or they all would have gone. Everyone was calling them “Everything Bad is in There”.
I like that name for them! 🙂 I’m glad everyone enjoyed them!
Thanks! The “retiree’s just went out for a 10k run to compensate.
The recipe calls for 2 pies of bacon, chopped as one of the cookie ingredients.
It also callsfor 2 pieces of bacon, chopped as one of the ingredients for the topping.
It doesn’t say in the instructions, but am I to assume this is cooked bacon? I can’t imagine it being raw. Sorry for the stupid question……Please reply. Thanks.
Not stupid at all. You’re right, it’s cooked bacon.
Thank you! I had the same question
All of my favorite things baked into one dish. Sounds divine to me!!!!!!!!

Thanks Anna! 🙂
Ok these totally are Man Bars (cute name!) but I could see how you wouldn’t want to call them that, so that women (like me!) feel like they can eat just as many of them as the men because they look DELISH!
All of those toppings are making me so hungry. This looks so perfect!!
Ok these cookie bars are utterly insane!!! It explains why I am so in love with them!!

I think “Man Bars” is pretty much the perfect name for these bars – not quite as descriptive but perfectly apt! You couldn’t have come up with a more perfect and interesting combination of flavors! Mmmm bacon.
What a cool flavor combo!! And thank you for linking to me!!
No, you have to call them Man Bars! Don’t listen to your husband. That’s the perfect name for these!
