These Chocolate Covered Nutella Pretzel Bites are my new favorite treats! Perfect little bites of Nutella heaven that are so easy to make.

Why, oh why did it take me so long to make these? They’ve been on my list of things I want to make for a while now. I’ve seen the peanut butter versions of these a few times (Sally’s Baking Addiction’s Chocolate Peanut Butter Pretzel Bites) and wondered how they’d work with Nutella.

Truth is that I like peanut butter, but I’d take Nutella over peanut butter any day. It’s sweeter. 🙂

And even though I love sweet, one of the great things about these is the little bit of salt from the pretzels. It’s subtle, and yet totally complements the pretzels and Nutella to make the perfect sweet and salty treat!

I actually made them for us to eat when we had some friends over to watch football last Saturday. They didn’t last until the end of the game.

Speaking of football – do any of you participate in fantasy football? I never have before, but this year the hubs and another couple that is good friends of ours decided that the 4 of us should compete against each other.

We got all set up to do the draft one night. The guys were armed with all their research they’d done, including printouts. They had strategies and everything.

Us ladies like football, both NFL and college, but just went off of our knowledge of football based on watching it every weekend. We didn’t bother with all the research and everything.

Of course the guys totally thought they’d dominate us.

But guess who’s in first place according to points? That’s right. ME! And us ladies are tied for first based on wins-loses.

Guess strategy doesn’t account for anything. 🙂

And making the hubs even more frustrated – I’ve completely forgotten my login info and haven’t changed my lineup for a few weeks now. Ha!

I guess I’m just better at drafting players. Or maybe it’s beginners luck. Whatever. I’m winning. I’ll take it!

But back to these amazing bites! I would eat them until I felt sick. And I pretty much did. They are that good.

I’m big on texture and the combo of crunch from the pretzel, the hardened chocolate and firm but not hard Nutella satisfies for sure.

I dipped half of mine in melted peanut butter chips and half in vanilla almond bark. I do love the combo of Nutella and peanut butter, but I didn’t have enough to dip them all. The white chocolate is awesome too.

If you want to do the peanut butter chips, I’ll warn you that even when melted, they are quite thick. You can still dip the bites in when they are nice and cold, but I figured I’d let you know. The almond bark is much thinner and easier to work with.

Either way you go, these babies rock! They’re definitely a new regular for me!

Chocolate Covered Nutella Pretzel Bites

Description

These Chocolate Covered Nutella Pretzel Bites are made with bite sized pretzels sandwiched around Nutella filling and dipped in your choice of flavored candy coating. It’s an easy and indulgent treat!


Ingredients

  • 2 tbsp butter, room temperature
  • 1 cup Nutella
  • 1/23/4 cup powdered sugar
  • 60 mini pretzels
  • 8 oz vanilla almond bark (or peanut butter, chocolate, white chocolate baking chips)
  • Sprinkles, optional

Instructions

  1. Combine softened butter and Nutella in a medium sized bowl.
  2. Stir in 1/2 cup of powdered sugar until it forms a dough. Dough will be sticky, but you can add more powdered sugar if it’s too sticky to work with. Add up to an additional 1/4 cup powdered sugar, if needed to thicken the dough.
  3. Roll dough into about 30 balls. Place the balls on parchment paper as you make them. The balls will be kind of soft, but will firm up nicely in the refrigerator.
  4. Refrigerate dough balls for about 10-15 minutes.
  5. Sandwich dough balls between two pretzels and place back on parchment paper in refrigerator.
  6. Refrigerate the pretzel bites while you melt your vanilla almond bark (or baking chips) in the microwave, stirring every 20-30 seconds until smooth.
  7. Dip pretzels bites halfway into melted vanilla almond bark (or baking chips) and place back on parchment paper.
  8. Add sprinkles, if desired. Allow bites to dry and store in the refrigerator until just before serving.

Notes

I used half vanilla almond bark and half peanut butter baking chips for dipping my bites. Just so you know, the peanut butter chips are much thicker when melted. It may seem too thick for dipping, but it works fine as long as your bites are cool and firm.
