Summer time is one of the best times of the year, wouldn’t you agree? The warm weather gets us outside, the sun covers us in vitamin D and it all just generally makes us happy and more healthy. At least that’s how I feel. It’s great to get outside and for us, the warm weather means regularly spending days on the lake.

Well my mom trained me well over the years so going out on the lake also means getting together a cocktail to be shared. I usually make a pitcher and put it in the cooler. We made this Tropical Watermelon Lemonade Cocktail a few weeks ago for the fourth of July and I couldn’t wait to share it with you! The watermelon just felt so American for the holiday! Plus, it really is refreshing and was a drink I will totally be making over and over.

How to Make This Tropical Cocktail

It is also quite easy to make. For the full pitcher you see in the photos, I used about 1/2 of a watermelon. They vary in size, but it was about 7 1/2 cups of cubed watermelon. Combined with the watermelon juice is lemonade, pineapple juice, rum and coconut rum. It’s a lot like watermelon lemonade but with a tropical flair from the pineapple and coconut. You definitely taste the watermelon more than anything, but the other flavors add a light, refreshing and slightly tropical flavor that make it the perfect choice on a hot day.

To get the watermelon down to a juice, I put it right in my blender. It did a great job of blending everything. Watermelon is so soft and full of liquid, it’s easy to blend. You can definitely strain the watermelon juice to get any seeds or chunks out, but you should end up with about 6 cups of juice for the pitcher. Once you combine the watermelon juice with the other juices, add the rums. You could add more or less of the rum, depending on how strong you like it.

We were big fans of this fun and summery cocktail. The flavor of the watermelon is perfect and makes a wonderful summertime drink! And with so many great watermelons available – and usually on sale right now – it’s a great way to turn fresh fruit into a fun cocktail. 🙂

Description

This Tropical Watermelon Lemonade Cocktail is my new favorite drink for summer! Made with delicious Georgia watermelon, it could’nt be more light or refreshing!


Ingredients

  • 7 1/2 cup watermelon chunks
  • 4 1/2 cups lemonade
  • 2 1/4 cups pineapple juice
  • 2 3/43 cups rum
  • 1 1/41 1/2 cups coconut rum

Instructions

1. Place watermelon chunks into a blender and blend until smooth.
2. Pour watermelon juice through a fine mesh sieve and discard pulp. You should have about 6 cups of watermelon juice.
3. Combine watermelon juice, lemonade, pineapple juice, rum and coconut rum. Stir to combine. Add more or less rum, as desired.
4. Serve cocktail over ice and garnish glasses with watermelon and lemon slices, if desired.
