This No Bake Margarita Pie is so simple to make and is full of flavor. With lots of lime and a hint of tequila, you’ll no doubt want to make this pie over and over. Perfect for summer!

Speaking of summer, all our flowers are finally beginning to bloom. Since spring came kind of late, a lot of our flowers that might have bloomed earlier kind of died from cold. It was very sad.

But now the roses bushes are going crazy and our lilies- omg! We planted stargazer lilies years ago when we moved in (they’re my fave) and they get bigger and bigger every year. This year, one plant in particular has gotten so big. It’s nuts! I can’t wait to see how massive the blooms are.

And my peonies? Well those darn things, in three years, never did anything. I think I planted 5 bulbs and the most I’ve gotten in the past is a few leaves that look more like a weed than a plant.

But now I have a plant! It’s pretty big for itself and has a ton of leaves! You guys, if I get a peonie I will be so thrilled. Those and the lilies are the best!

The honeysuckle is also out. We don’t have that in our yard, it is more of a weed after all, but it’s in the neighborhood and when I walk Jessie I always see – and smell – it. It reminds me of when I was a kid.

I googled and apparently the kind of honeysuckle we have around here is Japanese Honeysuckle. Who knew there were different types? I remember hunting that stuff down with my younger brother when we were kids so that we could eat the nectar out of them. Anyone else ever do that?

There was an empty lot in our neighborhood next to our house for a while and there were a bunch of honeysuckle right there, just waiting for us all the time. Hours of entertainment. After basically eating flower nectar constantly, it’s no wonder that I’m so allergy free. I’m practically a flower myself. 🙂

Of course as an adult, I’ve moved on to much more sophisticated treats like is Margarita Pie. 😉

It starts with a graham cracker crust – the ultimate in sophistication. It’s one of my favorite types of crust because it’s so easy to make. And did you know you can actually buy a box of graham cracker crumbs? You don’t have to buy full ones and crush them. No, the graham cracker makers of the world have made it even easier for you. And I thank them for that.

So once the crust is made, the fun begins. The filling is made with plenty of lime juice, some tequila and even some triple sec. You could totally leave out the alcohol if you want, but it’s really not strong at all (I might even add more 🙂 ).

The mixture might seem a little thin at first, but it firms up in the fridge and ends up with this wonderfully light mousse-like texture. I love the combination of the graham cracker crust, the light lime-y filling and the whipped cream. All together it’s got such great flavor, but is easy to make and light to eat. Like I said before – perfect for summer. It’d be great for a get together with friends, or for hoarding and keeping all for yourself. You’re call!

No Bake Margarita Pie

Description

This No Bake Margarita Pie is so simple to make and is full of flavor. With lots of lime and a hint of tequila, you’ll no doubt want to make this pie over and over.


Ingredients

CRUST

  • 1 1/2 cups graham cracker crumbs
  • 6 tbsp butter, melted

FILLING

  • 8 oz cream cheese, room temperature
  • 1/3 cup sugar
  • 1/3 cup fresh lime juice
  • 2 tbsp tequila
  • 1 tbsp orange liqueur (Triple Sec)
  • 2 tsp lime zest
  • 8 oz Cool Whip, plus a little more for topping (can be replaced with homemade whipped cream)
  • 12 drops green food color, if desired

Instructions

1. Add melted butter to graham cracker crumbs and mix until combined.
2. Press crumb mixture evenly into the bottom and up the sides of a 9 inch pie pan, then set aside.
3. Combine cream cheese and sugar and mix until smooth.
4. Add lime juice, tequila, orange liqueur and lime zest and mix until completely combined.
5. Fold in the Cool Whip and green food color, if desired.
5. Spread filling evenly into crust and refrigerate for several hours, until firm.
6. When ready to serve, top with additional Cool Whip and lime zest.

    I love peonies! I have three in my yard, which the previous owners put in so they’re pretty big by now. I just put in some Columbine, yellow archangel and jumping jacks, so wish me luck I don’t kill them! Are you going to put up pictures if you do get some blooms?

    Also, what a nice pie! So easy and light, just right for summer.

    I’m full of admiration. See, I can’t garden. Not even a little. I kill everything I touch, not on purpose. It’s very, very sad.
    I can totally sit back and eat pie, though. I’m VERY good at that. Especially when there’s margarita ANYTHING involved!
