This Watermelon Elderflower Cocktail is made with Georgia watermelons, cucumber and lime juice – it’s the perfect refreshing drink for summer!

Watermelon Elderflower Cocktail
Watermelon is one of those fruits that just screams summer. It reminds me of watermelon eating contests and spitting the seeds all over the driveway.
Of course that was when I was a kid. Now that I’m all grown up, I like to spike my watermelon. 🙂
When I decided to make a watermelon cocktail, I knew I wanted to include Elderflower. I tried it for the first time about 6 months ago and fell in love.
When combined with some lime juice and cucumber, the watermelon and Elderflower make what is my new favorite cocktail. It’s so delicious and would appeal to so many. It’s sweet with the watermelon, but not too sweet. And very light. It was fun to play around with it and get it just right.
And since the Georgia Watermelon Association is having a contest, you can have fun making your own watermelon drink as well. The GA Best Summertime Drink (featuring watermelon) contest is going on through July 27, so you have plenty of time to get your creations in. They have four different categories too – from 21 and up, to family friendly. And to sweeten the deal, there are prizes! Everyone loves prizes. 🙂
Who’s ready for some watermelon? I know I am!

Great refreshing cocktail! I had watermelon juice, and cucumber gin to use up – mixed equal parts cucumber gin, lime juice and elderflower liqueur, then topped up with watermelon juice … delicious!
So glad you enjoyed it!
I don’t think I’ve ever had elderflower, but oh my goodness, do these cocktails look fantastic or what!? So fun that the Georgia Watermelon Association is doing a drink contest too!
Looks delightful but at what point do you add the rum?
The recipe has been updated with that. Thanks Lyle!
Love anything with watermelon. This looks so refreshing!

Omg, yes! I’d totally forgotten about that. I had to go back to my post and look at what I’d said was in it. 🙂 So good!

You totally have to try it – it’s kind of sweet but not overly so. It’s my new fave. Thanks Beth!
I’ve got to try Elderflower! These sound so refreshing with the cucumber slices. Isn’t it great being able to spike our watermelon now instead of just seed-spitting contests? Haha!
