Iโm also in love with my new bowl for my KitchenAid stand mixer. We were shopping in Macyโs yesterday and I happened to find a new 6 quart bowl and I couldnโt pass it up! How awesome it will be to have 2 bowls!
I couldnโt find the price, but knew Iโd buy it as long as it wasnโt more than $100.
Well, it rang up at $0.01! Whhhaaaaat?!? It apparently wasnโt supposed to be out, but since it was and their policy is that they canโt sell something for a penny, I got the bowl for $15! Iโll take it!
I did a happy dance right then and there. Two-bowl happiness! You know what else makes me happy dance? This ice cream.
I canโt even stand how good this it is. Talk about cinnamon-y! I could basically coat everything in cinnamon and sugar, so if ice cream could talk, this one would speak my language.
The Story Behind This Ice Cream Recipe
Itโs actually inspired by an ice cream from our grocery store, Publix. We had Publix when we lived in Florida too and this was easily my favorite ice cream. I got it once when my dad was visiting because I knew heโd love it and he literally went about bought another carton for eat for the week. No joke, the best ice cream ever.
Why they stopped making it I will never know. I mean, I assume they stopped making it because Iโve looked for it all over and never found it. ๐
But have no fear! Iโve finally made my own version!
Iโve been wanting to do it forever and finally got around to it. Iโve been promising the hubs, who also loved the original and he was thrilled when tasted it. Amazing. Might even be better than the Publix brand.
I came home last week to find dirty bowls that had been full of the ice cream all over the house. Heโs not normally into eating ice cream all the time, but he couldnโt resist this one.
Itโs smooth and creamy, but has some texture from the soft oatmeal cookies and some crunch from the mini chocolate chips.
I used fresh baked cookies from the bakery, but if you have a favorite oatmeal cookie, go with it.
And I definitely recommend the mini chocolate chips as opposed to full size. Much easier to bite into when frozen.
And as if it couldnโt get any better โ you donโt need an ice cream machine! Score!!
Super easy, super flavorful and prefect for summer! Must. make.

The publix ice cream was literally my favorite ice cream of all time. I canโt wait to try this recipe! I still hope everytime I go down the ice cream aisle that they may have brought it backโฆ.so now, no more wishing!
I hope you enjoy it! ๐
Son of aโฆ Crap. My husband and I gave up ice cream this year (because we are cray cray and like to challenge ourselves with weird things) and this is hurting me a lot. I should have never clickedโฆ When January 1st rolls around, I MAYYYY have to dive into this recipe.
Lindsay,
Your recipe is fantastic! As a couple previous users commented, Ben & Jerryโs had a very similar flavor that is now difficult (if not impossible) to find and their version was ridiculously good. Your recipe tasted nearly identical to the B&J flavor (at least insofar that I can remember) except for the addition of mini-chocolate chips which makes yours, naturally, better!
After making the ice cream, I was trying to figure out how to use the remaining heavy whipping cream (I made my own whip cream) and corn syrup because I rarely buy either and I especially didnโt want the cream to go bad. Turns out homemade caramels are fairly easy to make and use both ingredients so if other users find themselves in a similar position, thatโs my recommendation.
Finally, Iโd recommend crumbling much more cookie than the recipe suggests. The cookie is the best part of the ice cream (alongside the cinnamon) and I wish I would have doubled (and possibly tripled) the amount.
Thanks again!
Matthew
Thank you so much Matthew! Iโm so glad you like it! I think the addition of more cookie pieces sounds great. And I love the caramels suggestion, Iโll have to try that myself. ๐
What are the dimensions of the pan you used? I want to make sure the caramel swirl/ice cream layers have a good ratio. Thanks for the recipe and Iโll let you know how it turns out!
Hi Matthew! I used a 9 x 5 x 3 Kitchen Aid pan. Iโd love to know how you like it! ๐
Cinnamon is my faaaavorite, and this ice cream sounds like my own personal heaven! Love the oatmeal cookie chunks too โ omg! Pinned ๐
How crazy awesome to get the bowl for only $15! And this ice cream, wowza!! I want that entire dish full! Pinned ๐
1. Iโm coming shopping with you next time. 2. I WANT THIS RIGHT NOW.
YUM! Ben and Jerryโs used to make an oatmeal cookie ice cream that was my absolute favorite. Iโve been meaning to try my own version for a couple years now but keep forgetting! This sounds so close to it!
That sounds delicious โ Iโve never had it. This does sound close though. You should give it a try โ so good!
