Reese’s Marshmallow Ritz Cracker Sandwiches
What exactly goes into these little bites of heaven, you ask?
1. Ritz crackers on the outside
2. Miniature Reeses
3. Marshmallow
4. Covered in chocolate
Holy yum! Peanut butter, marshmallow, chocolate and crispy, salty crackers – perfect snack! I love the crunch of the crackers. They are perfect for football watching this weekend or during the Super Bowl!
I topped them off two different ways, which you can see in the pictures. Some have a peanut butter chip drizzle and some have sprinkles. I love both, but I definitely have a thing for the sprinkles. They make everything so festive and happy!
In fact, I took some of these with me to the Carolina Panthers vs. San Francisco 49ers playoff game in Charlotte last week. What a bummer that game was! Now football is almost over for the season and tailgating is officially done.
It’s sad for it to end and the hubs is totally depressed that the end of football season is so near. To be honest, as much as I love football, I don’t mind the break. It gives us our Sundays back for a few months. More baking time! 🙂
Now that the Panthers are out though, I’m not sure who I’m going to pull for the win the whole thing.
I definitely don’t want to see the Patriots win another Super Bowl. They’ve won too many times.
And I’ll be shocked if the 49ers beat Seattle. I mean, as much as it was a bummer the Panthers lost, that would’ve been one tough game.
So my hope is that the Super Bowl is the Broncos vs. the Seahawks. From there, it’s a tough call.
Russell Wilson went to N.C. State for a couple years, and I think that’s nifty (I went right down the road to UNC Chapel Hill). I’ve also heard he’s a good dude. But I also like Peyton Manning. He seems like a good dude too. And John Fox – the Broncos coach – actually took the Panthers to their only Super Bowl back in 2003.
As for who’s the better team? I guess we’ll see.
So I’m torn. The hubs will be cheering for Seattle. Maybe I’ll go for the Broncos just to make it interesting. 😉 What do you think?

Reese’s Marshmallow Ritz Cracker Sandwiches

Description
These Reese’s Marshmallow Ritz Cracker Sandwiches are a delicious mix of sweet and salty. Don’t be fooled by their simple nature – they pack a lot of tasty flavors into each bite! Plus, they’re easy to make!
Ingredients
- 13.7 oz box Ritz crackers (2–3 of the 4 sleeves, 60 crackers total)
- 12 oz bag Reese’s miniatures
- 30 marshmallows (regular size)
- 3 cups semi-sweet chocolate chips
- 3 tbsp shortening
- peanut butter chips or sprinkles for decorating, optional
Instructions
- Preheat oven to 350° F and unwrap 30 Reese’s miniatures.
- Lay out a single layer of 30 Ritz crackers (salty side down) on a cookie sheet covered with parchment paper.
- Place one unwrapped miniature Reese’s on each cracker (big side down).
- Bake in preheated oven for 2-3 minutes.
- Switch oven to convection bake (keep temperature at 350° F). Add one marshmallow to the top of each Reese’s cracker. Bake the sandwiches for another 1-2 minutes, until marshmallows gets puffy.
- Remove from oven and work quickly, adding one Ritz cracker (salty side up) to the top of each melted Reese’s cracker, pressing down to make a sandwich.
- Allow sandwiches to cool completely on the cookie sheet.
- When sandwiches are cooled, melt chocolate chips and shortening in the microwave in a microwave safe bowl. Heat in 30 second increments, stirring between each time, until the chocolate is smooth.
- Stick a toothpick into the middle of the marshmallow layer of the sandwich and dip it into the chocolate coating. Tap the toothpick lightly on the side of the bowl to remove excess chocolate.
- Place chocolate covered sandwiches on parchment paper to dry. Add sprinkles if desired, or add a drizzle of another kind of chocolate (I used melted peanut butter chips).
