Chocolate Peanut Butter M&M Cookies

Growing up I was not a fan of peanut butter. I know. Crazy, right? Who doesn’t like peanut butter? Well, I didn’t. I’d eat jelly sandwiches instead of peanut butter and jelly. I think it’s just that I always new I’d prefer sugar. Even when I didn’t really know it yet.

But something happened a few weeks ago.

I made a cake for a co-workers birthday. I haven’t shared it yet. Sorry about that. I’ve been trying to get to baking some fun Christmas stuff. But I will say that this cake had a peanut butter cream cheese icing in it. It was a first for me. I didn’t think I’d like it.

Boy was I wrong. I COULD NOT STOP EATING IT. All by itself. No cake. Just peanut butter cream cheese icing. Amazing.

So now I appear to be a peanut butter fan. Imagine that! I even bought peanut butter M&Ms! And made cookies with them! It really is a crazy breakthrough for me on the peanut butter front.

So I hope you enjoy the first peanut butter cookies I have ever made and wanted to eat. The M&Ms are obviously wonderful (if you like peanut butter) and the cookie is a wonderfully chocolatey and dense one. Not to be eaten without a big glass of milk. Or given the holiday season, I like eggnog.

You could even replace the peanut butter M&Ms with mint ones for a nice minty chocolate cookie. Yummy!

Description

Chocolate Peanut Butter M&M Cookies are homemade chocolate cookies that are loaded with peanut butter M&Ms. These easy cookies are chewy, dense and oh so delicious!

Ingredients

  • 1 cup unsalted butter, room temperature
  • 1 1/4 cups sugar
  • 2 eggs
  • 1/2 cup dark cocoa powder
  • 2 1/4 cups all-purpose flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 11.4 oz bag peanut butter M&Ms (or mint M&Ms!)

Instructions

1. With an electric mixer, combine butter and sugar. Beat on meadium-high until light and fluffy, about 2-3 minutes.
2. Blend in the eggs one at a time. Scrape down the sides of the bowl to make sure all is well incorporated.
3. Mix in the cocoa power until well mixed.
4. Add the flour, salt and baking power and mix.
5. Add M&Ms with a spatula and make sure ingredients are well combined. Be aware that the dough is quite thick.
6. Break off pieces of dough and roll into balls of about an inch or so, then flatten a little bit into a disc. These cookies spread a little bit while baking, but not much.
7. Place on a parchment lined cookie sheet and bake at 350 degrees for 8-10 minutes.
