This Crock Pot Red Beans and Rice recipe is my new favorite meal. Not only is it FULL of flavor, but it’s also the easiest thing to make. Just toss it in the crock pot, go about your day, and enjoy it at dinner time!

Red beans and rice is actually a popular New Orleans cajun meal, but it was introduced to me in college by a roommate of mine. I’m not sure where her recipe came from, but I fell in love. When I found this recipe I knew I had to try it and I fell in love all over again. I had forgotten just how good this stuff is. It has so much flavor and just enough spice. If you are a fan of sausage and beans there is no doubt you will love this.

And again it is incredibly easy. I mean who doesn’t love a good crock pot meal? The only thing required is little bit of veggie and sausage chopping. And truthfully you can buy most veggies already chopped if you really want to.

I do warn you though that it makes A LOT! It could easily feed 8-10 people. And it is quite filling with all the beans, sausage and rice -though I don’t add too much rice to mine. The good stuff is in the red beans and rice. You could definitely cut the recipe in half and though I haven’t tried it, I’d imagine you could freeze it (not the rice though – eww).

Description

This Crock Pot Red Beans and Rice recipe is my new favorite meal. Not only is it FULL of flavor, but it’s also the easiest thing to make. Just toss it in the crock pot, go about your day, and enjoy it at dinner time!


Ingredients

  • 1 lb bag of dried red beans
  • 7 cups water
  • 1 green bell pepper, chopped
  • 1 medium onion, chopped
  • 3 celery stalks, chopped
  • 3 garlic cloves, chopped or minced
  • 2 cans Campbell’s chicken broth
  • 1 1/2 pounds smoked sausage
  • 2 tablespoons Creole Seasoning
  • Rice

Instructions

1. Rinse beans thoroughly and put into crock pot.
2. Add water, chicken broth, garlic and chopped vegetables to the beans.
3. Slice the sausage into bite sized pieces add to the crock pot along with the creole seasoning.
4. Cook on high for about 7 hours.
5. When ready to eat, cook rice according to package.
6. Put desired amount of rice in the bottom of a bowl and top with desired amount of red beans and rice.

    A top notch recipe! To start I added all the pork neck bones that would fit in my crock pot, an extra stalk of celery, and then had to cook it with the lid cracked as it was so full. The next morning some of the liquid had cooked down so I was able to add a lot of chopped sausage coins and went to work. When I got home the kids hadn’t seen my note to turn it off and it had cooked 14 hours with the lid partly open. The onion had caramelized and overall it was … delicious! Thank you for sharing! It was exquisite served with a scoop of sour cream. 100% recommend, a good recipe. Might make some corn bread to go with it too. I’d also used more of the spices overall. It called for two tbsp creole seasoning and I added about between three and four tbsp.

    I had a little too much liquid left in mine so I just added the rice when it was done and let it cook up in the juice. Gonna put them together anyway right? 🙂

      Hi Shannon! I have never tried it, so I’m not sure. It seems possible that it could work. If you give it a shot, I’d love to know how it turns out!

      Hi Lindsey, do you soak your beans prior to putting them in the crockpot? I soaked mine overnight before cooking the next day and I had a lot of extra liquid, which I was thinking was because I had soaked them already. Delicious nonetheless, but would prefer a little less liquid.

      Hey, I would not put the rice in the same pot, it just won’t be the same.

      Also, toss a couple bay leavein there and use some andouille sausage if you can find it.

      Salt, pepper, ceyanne to taste.

      Plateing rice, then beans on top is definitely the way to go.

      The sausage only really needs the last hour of cooking, but will do fine for the whole time. Also, I really like to brown the sausage in a skillet, but that’s also not necessary.

      If you are around, you can mash some of the beans against the side of the pot towards the end, but this is also not necessary.

      How much rice should be added to the crock pot before cooking? I assume it is to make sure there is not extra liquid in pot after cooking 7 hours since contents are to be served on top of scoop of cooked rice.
